Indian Pork Curry

Ingredients
- 1 1/2 pounds cubed pork shoulder
- 1 tablespoon oil
- 1 chopped onion
- 3 garlic cloves
- 1 tablespoon grated ginger
- 2 tablespoons curry powder
- 1 cup chopped tomatoes
- 1 cup stock
- salt
Method
- Brown the pork in oil, then set aside. Soften the onion and stir in garlic, ginger, and curry powder.
- Add tomatoes and stock, scraping the pan. Return the pork, cover, and simmer gently until tender, adding water if needed.
- Check that pork has reached at least 145°F and allow a 3-minute rest before serving. Serve with rice. This is our straightforward kitchen adaptation; the original archive also recommended Nish Kitchen’s Indian pork curry.
