A big part of what makes Mangalitsa pork special is its creamy, buttery fat, so we recommend not cooking this bacon until it’s completely crisp – much of the fat the fat will be rendered out and the bacon may be left too salty. Instead, cook it until the meat is cooked, but the bacon is still somewhat pliable.

Cook in a skillet over moderate heat or bake in a single layer. Follow the package instructions and stop at your preferred texture once cooked; the rich fat is part of the experience.
