Mangalitsa Bacon, Hickory Smoked Brown Sugar-Cured Bacon or Uncured Bacon, is made from the thick bellies of the Mangalitsa pig.

Mangalitsa Bacon is like traditional pork bacon, but it is cut from a fatty belly. The meat is cured with brown sugar, salt and other herbs, and then Hickory smoked to develop a rich, smoky flavor. The fat in Mangalitsa Bacon is highly prized for its soft texture and rich taste. Our Uncured Mangalitsa Bacon is just like our Cured Bacon only Celery Powder is substituted for the curing salts.

To prepare Mangalitsa Bacon, it can be sliced and pan-fried or baked in the oven until crispy. It can also be used as an ingredient in a variety of recipes, from sandwiches to pasta dishes to soups and stews.

A big part of what makes Mangalitsa pork special is its creamy, buttery fat, so we recommend not cooking this bacon until it’s completely crisp – much of the fat will be rendered out and the bacon may be left too salty. Instead, cook it until the meat is cooked, but the bacon is still somewhat pliable.

Check the included cuts and package directions before planning meals. Keep frozen until needed and thaw in the refrigerator. Whole cuts need 145°F plus a 3-minute rest; ground pork and fresh sausage need 160°F.
