Collar (neck) roast sometimes called the Coppa Roast is one of the most tender cuts of the pig. This is the cut that we carve our famous Delmonico Steaks. The Delmonico (Coppa Steaks) are taking the chefs by storm.

Makes great pulled pork for Tacos, Fajitas, Carnitas, or boneless pulled pork sandwiches.

They are usually about 3.34-4.44 lbs. per package.

Brown the roast, then cook covered with stock and aromatics until tender. Check the thickest part for at least 145°F and rest at least 3 minutes before slicing.
